RAW APPLE CAKE 
2 c. flour
6 Tbsp. butter
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt

Mix together well:

2 c. sugar
2 tsp. vanilla
4 c. finely diced raw apple
1/2 c. nuts
2 eggs

In mixer, beat butter and sugar. Add eggs; beat well. Add vanilla. Add dry ingredients, then apples and nuts. Dough is stiff.

Put into greased 9 x 13 inch pan.

Bake 1 hour at 325°F., or until top springs back when touched.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese, softened
2 tbsp. butter, softened
1 tsp. vanilla
4 c. powdered sugar (about)

Beat all together.
