SALSA SAUCE 
16 c. tomatoes, peeled & mashed (I wash, core & put in blender, strain)
2 c. green pepper, cut fine
2 c. onions, chopped
3-4 jalapeno peppers, cut fine
6-8 garlic cloves, cut fine
5 tbsp. salt
1 tbsp. pepper
4 tbsp. chili powder
3 tbsp. sugar
1 c. vinegar

Simmer all ingredient 30 to 40 minutes, then thicken with cornstarch (about 3/4 cup dissolved in a little cold water). Boil in hot water bath for 20 minutes. Makes 8 pints. If you don't have fresh jalapenos can use 3 to 4 tablespoons canned.
