GLAZED SWEET POTATOES 
6 yams (pick as near one size as possible)
3 tbsp. brown sugar
1/2 c. water
1/2 tsp. salt
3 tbsp. butter

Peel and cut yams longwise. Place in a heavy pan. Sprinkle salt over potatoes. Add brown sugar and butter and water. Cook on a low-medium fire until mixture comes to a boil. Turn heat down so potatoes simmer until done. Do not over cook. Check on potatoes often so they will not burn.
