SHOE PEG CORN CASSEROLE 
1 (16 oz.) can shoe peg white corn, undrained
1 (16 oz.) can sliced French style green beans, drained
1/2 c. grated sharp Cheddar cheese
1/2 c. cream of celery soup
1/2 c. slivered almonds, optional
1/2 c. chopped celery
1/2 c. sour cream
1/2 c. chopped onion
Salt & pepper
1/4 c. chopped bell pepper
Salt & pepper to taste
1 pkg. Ritz crackers

Mix all ingredients together in a long casserole. Roll 1 package of Ritz crackers into crumbs and mix with 1/2 stick of melted butter. Sprinkle over vegetables and top with 1/2 cup slivered almonds (optional). Bake in 350 degree oven for 45 minutes. Serves 8.
