WENDI'S JUMBO RAISIN COOKIES 
2 c. raisins
1 c. water
4 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/2 c. butter
1/2 c. shortening
2 eggs, slightly beaten
1 tsp. vanilla
1/2 c. chopped nuts (optional)

Bring raisins and water to a boil. Boil until the raisins are plump, about 3 minutes. Set aside to cool. (Do not drain.) Sift flour with baking powder, soda, salt and spices. Set aside. Cream butter, shortening and sugar together until light and fluffy. Add eggs and vanilla. Mix well. Stir in raisins and any remaining water. Stir in gradually the flour mixture, blending thoroughly after each addition. Stir in nuts, if used. Drop by tablespoonfuls about 1 inch apart onto greased baking sheets. Bake at 375 degrees for 12 to 15 minutes.

Makes about 3 1/2 dozen cookies.
