SOUR STRING BEANS 
2 c. raw string beans, sliced in 1 inch lengths
1/4 c. apple cider vinegar
1/4 c. brown sugar
Salt and pepper to taste
1/4 c. water
1/2 tsp. dried tarragon

In a large saucepan, bring enough water to cover the string beans. Bring to a boil. Boil the string beans for 5 minutes. Drain immediately so the beans will be crunchy.

In the same saucepan, combine the vinegar, water, sugar and tarragon and let simmer for about 5 minutes. Add the beans and mix well. Season with salt and pepper to taste. Simmer on low stirring frequently until beans are just tender- --about 5 minutes. Serve hot or chill for a cool summer side dish. Serves 4-6.
