CHICKEN STRATA 
6 slices white bread
2 c. diced cooked chicken
1/2 c. chopped onion
1/2 c. finely chopped celery
1/4 c. chopped green pepper
1/2 c. mayonnaise
3/4 tsp. salt
Dash of pepper
2 eggs, beaten
1 1/2 c. milk
1 (10 1/2 oz.) can cream of mushroom soup
1/2 c. shredded cheese

Cube 2 slices bread. Trim crusts from remaining slices and cut up. Place cubes and crusts in bottom of 8 x 8 x 2 inch baking dish. Combine chicken, onion, celery, green pepper, mayonnaise, salt, and pepper. Spoon over bread cubes. Arrange reserved 4 bread slices atop chicken mixture. Combine eggs and milk; pour over all. Cover and chill 1 hour or overnight. Stir mushroom soup and spoon over top. Bake at 325 degrees for 1 hour or until set. Sprinkle cheese over top during last few minutes of baking. Serves 6.
