EGG ROLLS 
1 lb. ground meat, raw
1 lb. pork sausage, raw
1 onion, diced fine
1/2 green pepper, diced fine
2 sticks celery, diced fine
3 carrots, diced fine
3-4 minced garlic, diced fine
2-3 green onions, diced fine
2 eggs
1 pkg. bean threads
2-3 pkgs. egg roll wrappers

Mix all together except bean threads and egg roll wrappers. Salt and pepper to taste. Run water over bean threads to soften a little. Then cut them in small sections with scissors. Mix in meat mixture. Pat a little meat mixture on egg roll. Roll over, turn in sides, roll again. Dip finger or brush in egg white to glue flap down. Deep fry until golden brown. Dip in Dijon mustard or soy sauce. Very good. Good for party appetizer.
