TOOTIE'S SHRIMP OR CRAB AU
GRATIN
 
4 tbsp. butter
5 tbsp. flour
2 c. milk
1/2 tsp. salt
Dash red pepper
2 tbsp. sherry
1/2 lb. extra Sharp Cheddar cheese
1 can artichoke hearts, cut into sm. pieces
1 sm. can mushrooms
2 lbs. cooked shrimp or crabmeat

Melt butter over medium heat. Stir in flour until smooth. Add milk, salt and pepper. Stir until thick. Add cheese and sherry, and stir until cheese melts. Stir in seafood, artichokes and mushrooms. Put in buttered casserole dish. Bake at 400 degrees for 25 minutes. Serve by itself or over rice. Serves 8.

Note: May mix shrimp and crabmeat or shrimp and scallops.
