APPLE RAISIN COFFEE CAKE 
2 eggs, separated
1 c. sugar, divided
1/2 c. butter
1/4 tsp. salt
1 1/2 c. flour
1 tsp. baking powder
1/3 c. milk
2 c. apples, chopped
1/2 c. raisins

TOPPING:

4 tbsp. flour
2 tbsp. sugar
1/2 tsp. cinnamon
1 tbsp. butter

Beat egg whites until stiff, fold in 1/4 cup sugar of the 1 cup sugar in recipe, set aside. In a large bowl, cream butter. Add rest of sugar, salt and egg yolks. Beat until creamy. Mix flour and baking powder, add alternately with milk; fold in egg whites. Fold in chopped apples and raisins. Pour in greased and floured 11 x 7 inch pan. Mix topping ingredients until crumbly. Sprinkle topping on top of cake. Bake at 350 degrees for 45 minutes. Serves 15.
