APPLE RAISIN COFFEE CAKE 
3/4 c. sugar
1/4 c. soft shortening
1 egg
1/2 c. milk
1 1/2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. seeded raisins
Thinly sliced apples
3 tbsp. sugar mixed with 1 tsp. cinnamon

Thoroughly mix together sugar, shortening and egg. Stir in milk, then stir in combined dry ingredients. Add raisins, spread batter in greased 9 inch square pan. Arrange apples on top, pressing in slightly. Sprinkle with cinnamon mixture. Bake at 375 degrees for 25-35 minutes.
