ORANGE RAISIN COFFEE CAKE 
2 c. reg. flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda (baking)
1 tsp. cinnamon
1 tsp. orange extract
1/2 c. oil
1/4 c. orange juice
3 eggs
1 1/2 c. ground raisins
Rind of 2 oranges (ground)
(Juice of 2 oranges)
(2 tbsp. sugar)

Grind raisins and orange rind in food chopper. (Save the juice of the oranges in cup. Add 2 tablespoons sugar; stir well.) Add all other ingredients in bowl and mix well. Bake at 375 degrees for 35-40 minutes. Cake is done when inserted toothpick is clean.

When baked, top cake with the orange juice mixture while still warm. Use 9x13 inch pan.
