CAPT. JOE'S SCALLOPED POTATOES
AND ONIONS
 
5 lg. potatoes, peeled and sliced thin
3/4 c. chopped onion
3 tbsp. butter
1/4 c. flour
1 3/4 c. chicken broth
1 1/2 tbsp. mayonnaise
3/4 tsp. salt
1/8 tsp. pepper
Paprika

In a round casserole dish, layer potatoes and onions alternately. In a saucepan, melt butter, blend in flour. Gradually stir in broth, mayonnaise, salt and pepper. Cook, stirring frequently, until sauce bubbles and thickens. Pour over potatoes, sprinkle with paprika. Bake at 350 degrees for 1 1/4 hours.
