SCALLOPED GREEN PEAS AND ONIONS | |
1/4 c. butter (1/2 stick) 1/4 c. flour 1 tsp. salt 1 tsp. seasoned salt 1/4 tsp. pepper 2 c. milk 1 (10 oz.) pkg. frozen peas, partially defrosted and broken apart 1 lb. sm. white onions 1 lb. potatoes, peeled and sliced 1 c. shredded Swiss cheese Melt butter in saucepan over low heat; blend in flour, salts, and pepper. Add milk, stirring constantly. Cook and stir until sauce is smooth and thickened. Arrange 1/2 of the peas, onions, and potatoes in a buttered 1 1/2 quart shallow casserole. Spoon 1/2 the sauce over vegetables, sprinkle 1/2 the cheese over sauce. Repeat. Bake at 375 degrees until vegetable are tender, about 1 hour. Serves 6. |
