CHEESE SCALLOPED ONIONS 
4 lg. onions, cut into 1/2" rings
1 c. cheddar or American cheese, cut in 1/2" cubes
4 slices buttered toast, cut in 1/2" cubes
1 stick butter
1/4 c. flour
2 c. milk
1/2 tsp. salt
1/4 tsp. pepper
2-3 beaten eggs

Put onions in boiling water until softened to separate rings. Drain. Put 1/2 of onions in large casserole. Add 1/2 cheese and 1/2 toast and repeat layers of onions and cheese, but not toast. Melt butter, blend in flour and stir milk in gradually. Cook and stir constantly until thick. Add salt and pepper. Beat eggs separately, add hot mixture to eggs slowly. Pour egg mixture over entire casserole. Bake at 350 degrees until onions are soft.
