LAZY DAISY OATMEAL CAKE 
1 1/4 c. boiling water
1 c. quick cooking oatmeal
1/2 c. shortening
1 c. white sugar
1 c. brown sugar
1 tsp. vanilla
2 eggs
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. nutmeg

Pour boiling water over oatmeal, cover and let stand for 20 minutes. In mixing bowl, cream together sugars and shortening. Add vanilla and slightly beaten eggs and mix well. Add oatmeal and blend well. Add sifted dry ingredients and combine well with batter. Pour into a 9 x 13 inch greased pan and bake in a preheated 350 degree oven for about 35 minutes or until done. Frost with the following.

FROSTING:

1/4 c. melted butter
1/2 c. firmly packed brown sugar
3 tbsp. half & half cream
1 1/2 c. chopped pecans or walnuts
3/4 c. shredded or flaked coconut

Combine ingredients, spread over baked cake. Place under broiler in oven until frosting is bubbly being very careful not to burn.
