LAZY DAISY CAKE 
1 c. dates, chopped
1 c. boiling water
1/2 c. butter or Crisco
1 c. sugar
1 egg, beaten
1 1/2 c. flour
1/4 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
5 tbsp. brown sugar
3 tbsp. butter
1 tbsp. milk
1/2 c. walnuts, chopped
1 tsp. vanilla
1/2 c. coconut

Pour boiling water over dates. Set aside to cool. Mix butter, sugar, egg, flour, salt, baking powder, baking soda and the vanilla. Add cooled date mixture. Pour into 12 x 9 inch pan. Bring sugar, butter and milk to a boil for 1 minute. Add walnuts and vanilla. Spread topping over unbaked batter. Sprinkle with coconut over top. Bake at 350 degrees for 30 to 35 minutes. May be served with whipped cream or Cool Whip.
