AUSSIE RICE SALAD 
1 c. white rice, cooked and cooled
Raw or cooked vegetables as desired (peas and celery are good, but anything may be used)
1 green apple, unpeeled and diced
1/2 c. raisins
4 oz. cashews or peanuts
Sliced onion, if desired

DRESSING:

2 tbsp. cider vinegar
2 tbsp. vegetable oil
1 tsp. curry powder

Do not mix until near eating time as the raisins and nuts do not "sit" well. You may have to increase the dressing batch. This is a tasty way to use leftover vegetables and is a good accompaniment for grilled steaks or chops.
