CHICKEN AND VEGETABLES 
1 tbsp. butter
1 pkg. boneless, skinless chicken thigh meat
1 med. onion, cut into wedges
1 med. tomato, cut into wedges
1 med. zucchini, cut into strips
1/4 tsp. ground black pepper

Melt butter in large skillet. Add chicken and brown on both sides, 10-12 minutes. Add onion, tomato, zucchini and pepper. Cook covered, over low heat 5-7 minutes or until vegetables are tender-crisp. Makes 4 servings.
