COUNTRY WILD RICE CASSEROLE | |
3 c. cooked wild rice or (1 c. raw rice) 1/4 c. butter 1 c. onion, chopped 1 lb. ground beef or turkey 1/4 tsp. pepper 4 c. frozen O'Brien potatoes with onions & peppers 2 c. frozen corn (optional) 1 can cream of chicken soup 1 c. sour cream 2 c. mild Cheddar cheese 1/3 c. bread crumbs Saute onions in butter, set aside. Brown ground beef or turkey, season with pepper. In greased 9 x 13 inch pan, sprinkle potatoes. In mixing bowl, combine onion, meat, corn, wild rice, soup, sour cream and 1 1/2 cups cheese. Spread over potatoes. Sprinkle remaining 1/2 cup cheese and bread crumbs on top. Bake at 350 degrees for 40 minutes. This panful may be assembled and refrigerated the night before its baked and served. 8 to 10 servings. |
