APPLE CAKE 
1 3/4 c. sugar
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 c. cooking oil
3 eggs
1 tsp. vanilla
7 to 8 c. apples, peeled and sliced thin (5 to 6 Jonathan or Macintosh)
1 c. chopped nuts
1 c. raisins (optional)

Grease and flour 9 x 13 inch pan. Preheat oven to 350 degrees. Mix dry ingredients (sugar, flour, baking soda, salt and cinnamon). Blend oil and eggs in a small bowl. Add to dry ingredients with vanilla, mix well. Spread in pan. Sprinkle remaining nuts on top. Bake for about 1 hour. (Should be deep golden brown, filling set but still moist, just pulling away from sides of pan.) Cool and serve. Great with ice cream!
