POTATO FILLING (STUFFING) 
2 c. hot mashed potatoes
1 tbsp. minced parsley
1 egg, well beaten
2 tbsp. butter, melted
1 onion, minced
1 tsp. salt
1/2 tsp. poultry seasoning
1 qt. stale bread, toasted and cubed (approximately 7 slices)
1/2 c. celery, diced
Pinch of pepper

Mix together the potatoes and egg. Soak the bread in cold water and squeeze dry. Add to the potato mixture, stir in other ingredients and mix well. Use for stuffing fowl.
