SPINACH FILLED BAKED POTATOES 
4 med. sized baking potatoes, baked
1/2 c. soft butter
1 1/2 tsp. salt
1 tsp. sugar
1 tsp. dill weed
1/4 tsp. pepper
1 pkg. chopped spinach
1/4 c. chopped chives
1/4 c. grated Parmesan cheese

Cut off a small slice off top of potato, as it sits horizontally. (Its easier than a slit.) Scoop out inside. With electric mixer, beat potato; add butter and seasonings. Beat at medium speed until all blended and potatoes are mashed smoothly. With spinach thawed, squeeze off excess moisture, add to potato with chives, blending well. Refill shells. Bake uncovered at 350 degrees for 30 minutes. If chilled allow 45-60 minutes. Remove from oven, sprinkle with Parmesan cheese.
