JOYCE DAVIS' SQUASH - PEPPER
CASSEROLE
 
3 yellow squash, sliced
1 sm. onion, sliced
2 tomatoes, sliced
1 med. green pepper, sliced
1 stalk celery, sliced
2 tsp. salt
1 tsp. black pepper
2 tbsp. uncooked rice
2 tbsp. butter
1 tbsp. brown sugar

Combine all ingredients except butter and brown sugar in 2 (1 1/2 quart) casseroles. Dot with butter and sprinkle with brown sugar. Bake at 350 degrees in covered casserole for 1 hour, may be longer. Serves 6-8.
