RITZY BROCCOLI 
2 sm. pkg. chopped broccoli
1 can cream of mushroom soup, undiluted
2 eggs, beaten well
1/2 c. mayonnaise
1 c Velveeta cheese, diced or Cheez Whiz
1 c. Ritz crackers

Cook broccoli in salted water for 5 minutes. Drain well. Combine soup, eggs, mayonnaise and diced cheese. Mix well. Add drained broccoli and pour into baking dish. Sprinkle buttered cracker crumbs on top. Bake for 30 to 35 minutes at 350 degrees. This may be fixed and frozen until time to bake.
