GERMAN POTATO WAFFLES 
2 c. biscuit mix
3 sm. potatoes, peeled and cut up
1 egg, slightly beaten
1 c. milk
2 tbsp. salad oil
1 slice onion (1/4 inch thick)
Applesauce or apple pie filling
Sour cream

In blender combine mix and potatoes, eggs, milk, oil and onion, blend until smooth. Bake in waffle iron. Serve with applesauce and sour cream. Makes about 3 cups batter.

These came out ok, and such an easy recipe. The potatoes were not going to fit in my blender with everything else. I grated them and soaked them in some water for a few minutes, drained and mixed them in with the other items that were blended.
