SCALLOPED BACON AND EGGS 
1/4 c. chopped onion
2 tbsp. butter
2 tbsp. flour
1 1/2 c. milk
1 c. sharp processed American cheese, shredded
6 eggs, cooked & sliced
1 1/2 c. crushed potato chips
10-12 sliced bacon, crisp cook & crumbled

Cook onion in butter until tender, but not brown. Blend in flour; add milk. Cook, stirring constantly until mixture thickens. Add cheese and stir until melted.

Place a layer of egg slices in 10 x 6 x 1 1/2 inch baking dish. Cover with 1/2 of cheese sauce, 1/2 potato chips and 1/2 bacon. Repeat layers. Bake 15-20 minutes or until heated through. Serves 4.
