SCALLOPED BACON AND EGGS 
1/4 c. chopped onions
2 tbsp. butter
2 tbsp. flour
1 1/2 c. milk
1 c. sharp American cheese
6 hard boiled eggs, sliced
1 1/2 c. crushed potato chips
10-12 slices bacon, cooked and crumbled

Cook onion in butter until tender, not brown. Blend in flour. Add milk. Cook, stirring constantly until mix thickens. Add cheese. Stir until melted.

Place layer of egg slices, 1/2 of cheese sauce, 1/2 of potato chips in small casserole dish followed by 1/2 of bacon. Repeat layers. Bake 350 degrees, 20-30 minutes. Serves 4.
