SCALLOPED BACON AND EGGS 
8-10 hard-boiled eggs, sliced
1/4 c. chopped onion
2 tbsp. butter
2 tbsp. flour
1 1/2 c. milk
1 c. shredded Cheddar cheese
1 1/2 c. crushed potato chips
12 slices crisp bacon, crumbled

Saute the onion in butter. Blend in flour and add milk; cook until the white sauce is thickened; add the cheese to sauce. Place half the eggs into 9x13 inch pan. Cover with half of the bacon and sauce. Repeat to form the second layer and top with potato chips. Bake for 30 minutes at 350 degrees.

Ollie Yelton made this for one of our teacher appreciation breakfasts and we loved it almost as much as we loved her.
