TAMALE PIE 
1 lb. ground beef
1/2 lg. bell pepper (chopped)
2 stalks celery (chopped)
2 cans tomatoes
1 onion (sliced)
1/2 c. grated Velveeta
Salt and pepper to taste
Chili powder
2 pods garlic, minced
4-6 individual size bags Fritos (crushed)

Season meat and brown with garlic, bell pepper and celery. Layer 2 or 2 1/2 quart casserole with crushed fritos, then meat, then crushed tomatoes, then finely sliced onions. Repeat layers. Put final layer of crushed fritos on top. Grate Velveeta cheese over fritos. Bake in 350 degree oven until cheese melts. Use juice of tomatoes in each layer when squeezing tomatoes. Serves 4-6.
