WHITE FRUIT CAKE | |
4 c. flour 2 c. sugar 1 c. butter 1/3 c. milk 5 eggs 2 tsp. baking powder 1 tsp. salt 1 tsp. vanilla 1/2 tsp. almond extract 1 1/2 lbs. candied cherry 1 1/2 lbs. candied pineapple 4 c. or 1 lb. pecans 1 fresh coconut or 2 cans 1 box golden raisins Cream butter and sugar, add eggs one at a time. Beat until creamy. Add milk; vanilla and almond extract. Sift together flour, salt and baking powder. Mix nuts, which are in large pieces; whole cherries; diced pineapple; add fresh coconut, together. Mix with flour mixture and toss until mixed. Pour egg mixture over fruit and nuts. Mix thoroughly. Pour into large tube pan or into as many 1 pound pans as needed (5) which has 2 or 3 layers of waxed paper. Bake at 250 degrees over water for 1 hour. Remove water and bake for 1 1/2 to 2 hours more. |
