WHOLE WHEAT BANANA MUFFINS 
1/2 c. butter, softened
1 c. sugar
2 eggs, beaten
3 ripe bananas, mashed
1 1/2 c. whole wheat flour
1/2 tsp. baking soda

Combine butter and sugar; beat until light and fluffy. Add eggs and beat well. Stir in bananas. Combine flour and soda; add to creamed mixture, stirring just enough to moisten the dry ingredients.

Fill muffin pans 2/3 full. Bake at 350 degrees for 30 minutes or until done. (Test for doneness with toothpick.) Yield: About 15 muffins.
