DOUGHNUTS 
1 pkg. dry yeast
1/4 c. lukewarm water
1 c. milk, scalded
1/4 c. lard
1 tsp. salt
3/4 c. mashed potatoes
2 eggs, beaten
5 to 6 c. flour
1/4 c. sugar

GLAZE:

1 lb. confectioners' sugar
6 tbsp. water
1 tbsp. vanilla

Dissolve yeast in warm water. Add sugar, salt, and lard to milk. Cool to lukewarm. Mix eggs, potatoes, and yeast mixture with milk mixture. Stiffen. Let rise to double. Roll and cut. Let rise, then fry in deep fryer. Glaze.
