VEGETABLE CASSEROLE 
2 bags California blend (broccoli, cauliflower, carrots), cooked
1 lb. Velveeta cheese, cubed
1 stack Ritz crackers, crushed
1 stick butter

Place cooked vegetables in 9x13 pan. Arrange cheese cubes over vegetables. Mix butter with crushed crackers. Sprinkle on top. Bake at 375 degrees for 25 minutes. Serves 6-8.
