SECOND - HAND MASHED POTATOES | |
Mashed potatoes (at least 1 c. leftover) Eggs (2 per c. potatoes) 1 slice cheese per c. potatoes (American or your preference) butter Salt & pepper to taste Remash potatoes with eggs, salt and pepper (can smash with fork). Mix thoroughly. In deep frying pan, melt enough butter to coat bottom. Lower heat and add potato mix. Scramble as you would eggs until almost completely cooked. Add broken up pieces of cheese, don't stir. press into potatoes. Cover and turn off heat. Let stand approximately 2 minutes or until cheese has melted. Serve. Can also use fresh or instant potatoes (already made). |
