HASH BROWN QUICHE 
1 (32 oz.) frozen hash browns, thawed
2/3 c. melted butter (you may use less)
2 1/2 c. hot pepper cheese, shredded (8 oz.)
2 1/2 c. Swiss, cheddar, or gouda cheese
2-3 c. diced meat or vegetables (ham, bacon, sausage)
1 c. cream or milk
7 eggs
1/2 tbsp. seasoned salt
1 tbsp. pepper
Mushrooms, tomatoes and avocado or jalapenos, beans and salsa on top

Grease 9 x 13 x 2 inch pan. Fit hash browns into pan to form crust. Brush with butter. Bake at 425 degrees for 25 minutes. Top with layers of cheese or meat. Beat eggs, cream, and salt. Pour over cheese and meat. Add toppings, if desired. Bake at 350 degrees for 30 minutes, or a little longer if you add extra amounts of anything. Cool 20 minutes before slicing. Serve with fresh fruit and muffins or coffee cake. Serves 8-10.
