OLD TIME EGG CUSTARD
4 eggs, beaten
1/2 c. sugar
2 1/2 c. scalded milk
1/4 tsp. vanilla
1/4 c. butter
Pinch of salt

Blend eggs with sugar, salt and flavoring. Slowly pour scalded milk into egg mixture, stirring. Pour custard mixture into pastry lined pie plate. Sprinkle top lightly with nutmeg and place dots of butter over top. Bake at 400 degrees about 25 minutes or until barely firm.

You may also burn sugar on bottom of casserole type dish or in individual small bowls and then pour mixture into that, which gives you a caramel type base. Very good. Called "Flan" in Latin countries.
