APRICOT BREAD 
3/4 c. butter, softened
3/4 c. sugar
2 eggs, lightly beaten
1 c. chopped dried apricots
1/2 c. toasted coconut
1/4 c. orange juice
1 tsp. grated orange peel
1 tsp. ground cinnamon
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 c. sour cream
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Cream together butter and sugar. Beat in eggs. Stir in apricots, coconut, orange juice, orange peel and cinnamon.

In another bowl, combine flour, salt and baking soda. Stir into apricot mixture alternating with sour cream. Stir in nuts. Pour batter into a greased 9x5x3 inch loaf pan. Bake 1 hour or until toothpick inserted in center comes out clean. Remove from pan and cool on wire rack. Makes 1 loaf.
