CARROT COOKIES 
1 c. shortening
3/4 c. sugar
1 egg
1 c. raw carrots, ground
2 1/2 c. flour
2 tsp. vanilla
1 tsp. salt

ICING:

1 c. powdered sugar
1 tbsp. orange juice

Cream shortening and sugar; add egg. Add carrot and flavoring, mix well. Add dry ingredients and mix. Drop on cookie sheet and bake at 350 degrees until lightly brown. Ice when cool.
