HUMMINGBIRD CAKE 
3 c. flour
1 1/2 c. oil
2 c. sugar
3 eggs, beaten slightly
1 tsp. cinnamon
1 tsp. baking soda
1 sm. can crushed pineapple with syrup
2 c. chopped bananas (not mashed)
1 c. chopped walnuts or pecans

Stir by hand until well blended. Bake in 3 layers (or one 8 x 8 inch and one 13 x 9 inch pan) at 350 degrees for 35 minutes. Cool completely.

ICING:

8 oz. pkg. cream cheese
1 stick butter
1 lb. powdered sugar
1 tsp. vanilla
1 c. nuts

Blend cream cheese, butter, sugar and vanilla. Chop nuts and sprinkle on top.
