HUMMINGBIRD CAKE | |
3 c. flour 1 1/2 c. sugar 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 3 eggs, beaten 1 1/2 c. salad oil 1 1/2 tsp. vanilla 1 (8 oz.) can crushed pineapple (including juice) 1 c. chopped pecans 2 c. chopped bananas Combine dry ingredients. Add eggs and oil and stir until moistened. DO NOT BEAT. Stir in vanilla, pineapple and juice, pecans and bananas. Put in well greased 9x13 inch pan. Bake at 350 degrees for 55 minutes. Cool. FROSTING: 8 oz. pkg. cream cheese, softened 2 lb. powdered sugar (according to taste) 1/2 c. butter 1 tsp. vanilla Beat using only what you need "to taste" of the sugar. Ice cake and sprinkle with chopped pecans. |
