PASTA SALAD 
1 lb. fettuccine, linguine or spaghetti
1/2 c. olive oil, divided
1 clove garlic, finely sliced
1/2 lb. mushrooms, sliced
1 red pepper, chopped
2 green onions, sliced
1/2 c. dry white wine
1 tsp. freshly ground pepper
1 tbsp. chopped parsley
1/3 c. grated Parmesan cheese

Cook pasta accordingly, drain and place in large bowl. Toss with 1/4 cup oil. In large skillet heat remaining 1/4 cup olive oil over medium-high heat. Add garlic and cook 2 minutes, stirring constantly. Add mushrooms and pepper and saute for 3 minutes. Add green onions and saute 1 minute. Add wine and ground pepper, cook until heated. Pour over pasta along with parsley and grated cheese, tossing to coat well. Serve chilled.
