MARINATED ORIENTAL SALAD 
1 box rice
1 can chow mein vegetables
1 sm. can water chestnuts (sliced)
1/3 c. diced red peppers (pimentos)
2 s. sliced fresh mushrooms
2 c. pea pods (fresh)
2 c. frozen green peas
1 tbsp. celery seeds
1/2 tsp. pepper
1 c. chopped celery
1 c. chopped onion
2 c. vinegar
2 c. sugar
1/2 c. oil

Boil rice until done, rinse; drain well.

Mix together 2 cups vinegar and sugar. Add oil. Add rice, water chestnuts, pimentos, fresh mushrooms, celery seeds, chow mein vegetables and pepper to dressing mixture. Marinate overnight.

When ready to serve, add pea pods and thawed frozen peas. Serve on a bed of lettuce.
