SPAGHETTI WITH PORK TOMATO SAUCE 
1/3 c. olive oil
1/2 lb. lean raw pork, cut julienne
1 1/2 lbs. tomatoes, peeled and diced
1/4 tsp. salt
1/4 tsp. crushed red pepper
1 lb. spaghetti, cooked and drained
Grated Pecorino, Romano or Parmesan cheese

Heat oil in skillet. Brown pork in it very well. Stir in the tomatoes, salt and pepper. Cover and cook over low heat for 20 minutes. Pour over the spaghetti. Serve with grated cheese.
