HAM AND POTATO CASSEROLE 
1/2 minced onion
1 clove garlic
1 tbsp. cooking oil
2 tbsp. butter
1 c. diced cooked ham
3 eggs
1 tbsp. minced parsley
1 tbsp. minced chives
3/4 c. grated Swiss cheese
1 1/2 c. light cream
Salt to taste (ham is salty, also)
Freshly ground pepper
Dash cayenne
3 med. potatoes
2 tbsp. butter

Cook onion and garlic in oil and 2 tablespoons butter until limp, but not brown. Add ham and cook, stirring for 1 to 2 minutes. Beat eggs with parsley, chives, cheese, cream. Season. Peel potatoes and grate them coarsely. Press out liquid. Stir ham and potatoes into egg mixture. Pour into a buttered 2 to 2 1/2 quart casserole. Dot with 2 teaspoons butter. Bake in 375 degree oven 30- 356 minutes or until well brown. Serves 4.
