HAM AND POTATO CASSEROLE 
2 c. cubed potatoes
1 c. sliced carrots
1 c. chopped celery
1/2 c. water
3 c. cubed cooked ham
2 tbsp. chopped green pepper
2 tbsp. chopped onion
3 tbsp. butter
1/4 c. butter
3 tbsp. all purpose flour
1 1/2 c. milk
1 c. shredded Cheddar cheese
1/2 tsp. salt
1/8 tsp. black pepper
4 Ritz crackers

Cook potatoes, carrots, and celery in water until crisp tender. Drain and set aside.

Combine ham, green pepper, onion and 3 tablespoons butter. Cook until tender. Combine potato mixture and ham mixture in greased 2 quart casserole. Stir well.

Make sauce of 1/4 cup butter, flour and milk. Stir in cheese, salt and pepper. Pour over ham mixture. Sprinkle Ritz cracker crumbs over ham mixture. Bake at 350 degrees for 30 minutes.
