GREEN PEPPER AND BEEF OVEN STEW 
2 lbs. beef stew
1/4 c. all-purpose flour
4 tsp. salt
1 clove garlic, chopped fine
3 tbsp. shortening
1 1/2 c. water
5 med.-sized green peppers
2 c. sliced onions
2 c. diced tomatoes
1/4 c. chopped parsley (optional)
1/2 tsp. pepper

Blend flour with salt and coat meat with mixture. Melt shortening in frying pan and brown meat with garlic. Drain. Put meat in an oven dish, add water and cover. Cook in preheated oven at 325 degrees for 1 1/4 hours.

Add green peppers, onions, tomatoes, parsley and pepper. Return to oven and cook 20 minutes.
