DEBBIE'S QUICHE 
1 pie crust
Stir fried vegetables

CUSTARD:

2 eggs, lightly beaten
1 c. milk
1/2 tsp. salt

1 c. grated cheese

Pie crust variations: Add Cheddar cheese or poppy seeds or fresh dill. Make in 3 layers. Vegetable mixture on bottom, cheese second. Pour custard over all. Bake at 350 degrees for 40 to 50 minutes.

Onion Quiche: Stir fried onions, Cheddar cheese, and thyme or caraway in custard.

Parmesan Quiche: Onion and green peppers fried in olive oil, Parmesan cheese, and pine nuts in custard.

Classic Quiche: Stir fried spinach and mushrooms, Swiss cheese, and nutmeg in custard.

Zucchini Quiche: Stir fried zucchini (yellow summer squash also) with rosemary, Cheddar cheese, and rosemary in custard.
