CRUMB TOPPED COD 
1 lb. cod fillets, thawed
4 tbsp. melted butter, divided
1/4 c. fine dry bread crumbs
1 tbsp. chopped parsley
1/8 tsp. each salt, pepper, and paprika
Lemon wedges

Microwave method: Cut cod into serving size pieces. Coat on all sides in 3 tablespoons butter. Place in a microwave-safe dish. Combine bread crumbs, parsley, seasonings and remaining 1 tablespoon melted butter. Sprinkle crumb mixture over cod.

Cover with waxed paper; microwave on high for 2 minutes. Rotate dish a quarter turn; microwave at high for 2 or 3 minutes longer, or until cod flakes easily when tested with a fork. Serve with lemon wedges. Yield: 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
