COD GOUJONNETTES ALMONDINE 
1 1/2 lb. cod fillets
2 egg whites
1 tbsp. lemon juice
1 tsp. thyme
1 c. dry bread crumbs
1 1/4 c. sliced almonds
2 tbsp. almond or olive oil

SPICY TARTAR SAUCE:

3/4 c. sour cream
1/2 c. mayonnaise
1/2 tsp. chili powder
1/4 tsp. cayenne pepper
1/4 tsp. ground cumin

Spray baking sheet with non-stick spray. Cut cod fillets crosswise into 1-inch thick strips. Whisk egg whites with lemon juice and thyme. Roll gougonnettes in egg white mixture then in bread crumbs.

Press almonds onto fish on all sides. Lay goujonnetes on baking sheet. Drizzle with almond oil. Bake in 450 degree oven for 6 to 7 minutes until fish just flakes when tested with a fork.

Remove from baking sheet and serve with spicy tartar sauce. To make sauce, combine sour cream, mayonnaise, chili powder, pepper and cumin. Chill until ready to serve. Serves 4.
